Meredith Phillips, ruined my roommate for summer rolls. She demands them weekly and does nothing but complain when we eat them
in Vietnamese restaurants. "These aren't fresh" she says. "Ugh.
How can they sell this?" I am more forgiving of inexpensive restaurant
food, but Meredith's recipe for Fresh Shrimp Rolls with Peanut-Lime Dipping
Sauce really illustrate how easy, cheap, and fun making food with friends can
be.
The cellophane noodles and rice paper wraps aren’t ingredients I typically have in my pantry, but they were easy enough to find; both were right in my supermarket’s Asian section. One thing worth noting about the noodles is that they are also known as Chinese vermicelli, bean thread noodles, or glass noodles. They are all actually the same thing and all cook in about 5 minutes in boiling water.
In addition to the rolls, which, if you couldn't tell, we loved, we cooked up some Halibut Tacos with Chipotle Sour Cream and Peanut Butter Chocolate Ganache Bars. There isn't much to say about the tacos except that we had a lot of incredibly spicy chipotle puree left.
The peanut butter ganache bars are a different story. They totally rocked. If you like chocolate and peanut butter, you will love these ganache bars. Despite my efforts to get her to follow the recipe, my roommate Kelsey, did an admirable job setting up the ganache. She did this by ignoring the directions and "going with her gut." That's how she operates. (And it drives me nuts, especially when I'm trying to test recipes. As an afterward, I attempted to recreate the ganache twice and failed, miserably. There is something to be said about going with your gut, I guess. My chocolate got too hot and the fat separated out. It was ugly but tasted fine.)
I’ll be making some more of her recipes, but these were a great start. I appreciated concept that cooking is more fun when you share the kitchen with someone special. People have to eat, and cooking together is a great way to build or strengthen a relationship. I found some another good recipes for summer rolls here, here, and here.
My mouth is salivating in remembrance. The first time I made the rolls was in a Thai cooking class. We assembled them at the table and pulled fresh basil and mint leaves from our "centerpiece" to accompany the shrimp and noodles. Totally fantab and very fresh ;-)
